Ingredients
  • 1 tbsp avocado oil
  • 8 bone-in organic chicken thighs, skinned
  • 1 cup onion, chopped
  • 6 tbsp coconut amino acids healthier alternative to soy sauce
  • 3 tbsp filtered water
  • 3 tbsp white vinegar
  • 2 tbsp local honey
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 2-3 cups cooked basmati rice or brown rice healthier alternative to white rice
  • Fresh cilantro leaves
Servings: adults
Instructions
  1. Heat a large skillet over medium-high heat. Add oil after about 20 secs
  2. Add chicken and sauté for about 5 minutes or until brown, remove from pan
  3. Add onion to pan, sauté for 3 minutes. Add garlic, sauté for about 3 minutes
  4. Returen chicken to pan. Add coconut amino acids, filtered water, white vinegar, honey, black pepper and bay leaf and bring to a boil. Reduce heat to medium, cover and cook for about 15 minutes or until chicken is done and sauce thickens
  5. Serve with rice and top with cilantro
