Atlantic Cod fish tacos

Choose Wild caught seafood if at all possible. Farm-raised fish are grown in pens that are often submerged in ponds, lakes and salt water. Wild-caught fish, on the other hand, are caught in their natural environments by fisherman.

Farm-raised fish potentially contain high levels of PCBs, a potential carcinogenic chemical. In addition, farm-raised fish method sometimes include antibiotics and pesticides.

Why is Fish good for you health?

Wild-caught fish are richer in omega-3s than farm-raised fish. Wild-caught fish eat lots of other little fish who eat the algae that produce the omega-3s. Omega-3s are good for the brain and are linked to improving cardiovascular health.

Numerous controlled trials have also found that omega-3 fatty acids are beneficial against depression.  What this means is that fish can cite literally make you a happier person and improve your quality of life.

In addition, studies have shown that children who eat more fish have a lower risk of developing asthma! how about that?!

I make these fish tacos when I want something quick and nutritious for dinner without having to use up energy from the oven!  This recipe is very straight forward.  You can use all sorts of herbs and seasoning to your liking.  I like the fact that you can marinate ahead of time and leave it on the fridge while I do other things around the house.

Ingredients
  • 2 lbs cod fish
  • 1/2 cup avocado or extra virgin olive oil
  • 1-2 limones
  • 2 cloves garlic
  • 2 tsp dijon mustard
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt
For garnish:
  • Sprouted or whole grain tortillas
  • 1 handful chopped cilantro
  • 1/2 chopped dice onion
  • 1 diced tomato
Instructions
  1. In a container, mix lemon juice, pepper, salt, dijon mustard

  2. Add oil slowly, then add garlic, whisk until mix

  3. Place fish in a glass container or plastic bag (ensure it is PCB free!) and pour marinate over it

  4. Refrigerate up to 1 hr

  5. Remove fish from marinade and pat off excess marinade

  6. Season with parsley, rosemary, salt, etc (optional)

  7. Pan-Fried on high heat for about 2-3 minutes each side

  8. Cut into bite-size chunks 

  9. Warm tortillas and fill with cooked marinated fish.  Top with cilantro, onion and tomatoes
