Ingredients
  • 1 lb organic chicken breast thinly sliced across grain
  • 1/2 lb pad thai noodles or spaghetti cooked per box instructions
  • 2 tbsp olive oil
  • 2-3 tbsp oyster sauce
  • 2 tbsp fish sauce
  • 1 tbsp coconut amino acids or light soy sauce
  • 1 tbsp fresh ginger, peeled and minced
  • 2 cloves garlic, peeled and minced
  • 2 medium shallots cut into small pieces
  • 1 medium red bell pepper sliced into small pieces
  • 1 medium onion sliced into small pieces
  • 1 medium tomato sliced into small pieces
Servings: 2 kids, 2 adults
Instructions
  1. Cut organic chicken breast into thinly sliced pieces
  2. Chop shallots using a food processor
  3. Slice onions, tomatos and red peppers
  4. Pre-heat a shallow pan or wok, add olive oil (do not let the oil smoke)
  5. Add minced garlic, wait 2 to 3 minutes (do not let it burn!) you will start smelling its flavoring fragrance
  6. Add chopped scallions and sliced onions on top of garlic and stir for 2 minutes
  7. Add red bell peppers and stir for additional 2 minutes
  8. Add chicken stirring briskly, until the chicken is almost cooked
  9. Combine coconut amino acids, fish sauce, oyster sauce and add to pan, stir for 2 minutes
  10. Add tomatoes, ginger and cooked pad-thai or spaghetti, stir for 2 minutes
  11. Remove from heat and serve with with fresh basil leaves on top
