Egg noodles with Chicken & Cabbage

Ingredients
  • 3 tbsp olive oil high heat oil
  • 6 oz dried Chinese egg noodles or spaghetti
  • 1-1.5 lb organic chicken breast thinly sliced
  • 2 cloves garlic minced
  • 3 cups napa cabbage thinly sliced
  • 3 stalk celery thinly sliced
  • 3/4 cup lower sodium chicken broth
  • 4 tbsp coconut amino acids (instead of soy sauce)
Servings: 2 adults, 2 kids
Instructions
  1. Cook noodles according to package directions. Drain and rinse with cold water; set aside
  2. Heat a large nonstick skillet over medium-high heat
  3. Add oil; swirl and coat. Add garlic and stir until fragrant, about 30 secs to 1min
  4. Add chicken and stir-fry for 1-2 minutes
  5. Add cabbage and celery; stir-fry 1 minute. Stir in broth and coconut amino acids
  6. Add noodles; stir fry 3 minutes or until thoroughly heated and noodles begin to lightly brown.
