Yummy vegetable juice

Our family has been using daily for about a year now. I get up about 10 minutes earlier to get the juice going or get it ready before they come back from school. We don’t do it for detoxing purposes (detoxing is pointless to us), we do it mainly to get the nutrients and vitamins from the vegetables. My 8 yr old doesn’t like it that much, but he still drinks it because as he says ” I don’t like it but it is good for my body”; interestingly enough, he actually likes to chew on vegetable! My 6-yr old is a little bit more picky about eating vegetables, but loves to drink them! LOL….good grief! Either way the four of us drink our veggies! They usually have it as a ‘snack’ after school when their stomach is empty and gives them more energy for soccer practices later in the evening.

Keep in mind that with juicing you get the nutrients/vitamins but depending on the type of juicer you have, you might be stripping away the fiber, if this is the case, ensure you consume enough fiber during the day. Ensure you and your family are eating fresh fruit, vegetables, beans & legumes, whole bread grains daily (ensure it says whole grain as the first ingredient and not something like “unbleached wheat”). You can even have Daily Fiber Formula to get at least 25 grams of fiber.

My recommendation is to try different portions and vegetables, limiting the fruits. My goal is to have at least spinach and chard or chinese cabbage, as these are three of the most nutrient dense vegetables. One more thing, if buying all organic is not an option, focus on buying organic apples and cucumbers as these are a couple of the produce that contain higher content of pesticides. Again be flexible about the quantity of each of the vegetables, use what you got, this is usually what I use and in this order:

Ingredients
  • 1-2 cucumbers preferably organic, if not, I use a a potato peeler to peel off skin
  • 2 handful bunches spinach
  • 2 chard leaves or kale leaves or green collards (up to you or all of them!)
  • 3-4 chinese cabbage leaves
  • 4 stalks celery preferably organic
  • 1-2 green apples
  • 1 handful green grapes
  • 1 inch ginger peel skin to reduce sourness
  • 1 handful parsley or cilantro, preferably organic
  • 1/4 lemon peel skin to reduce sourness
Servings: 2 kids & 2 adults
Instructions
  1. Juice all ingredients above in order in your juicer
  2. Drink immediately!
Recipe Notes

If you and your kids are new to vegetable juice I recommend starting without the ginger and 2 apples and a little bit more of green grapes, as your taste buds start getting used to the vegetable juice, then add the ginger and reduce the fruit.
