Ingredients
  • 3 organic Granny Smith apples
  • 1/3 cup brown sugar Preferably organic
  • 1/2 tsp cinnamon
  • 2 Tbsp Earth Balance organic butter or any of your choice, preferably low in sat fat and organic
  • 1 Tbsp tapioca powder
  • 2 crusts organic whole wheat pie crust preferably 100% whole wheat, unbleached
  • 1 organic egg beaten to use for the egg wash

Instructions
  1. Preheat oven to 375 degrees and line a baking sheet with parchment paper
  2. Peeled, cored and diced the apples to about 1/4 inch
  3. Melt the butter in a small skillet over medium heat. Add the diced apples, cinnamon and tapioca flour. Cook about 5 minutes until apples are tender and sauce has thicken. Remove from heat
  4. Roll one of the pie crusts using a rolling pin, leaving the other as is. By having one crust being a bit bigger than the other one helps in making sure you can seal the dough without stretching and tearing the dough
  5. Using a tablespoon, scoop out the apple filling and place it on the unrolled crust. Repeat this 10 times. Ensure you leave enough space in between each mound of apple filling to seal and cut around
  6. Brush the egg wash around the filling
  7. Place the rolled out crust over the top and gently press down between the mounds of apple filling
  8. Use a round cup or glass that is big enough to cut around the apple filling mound
  9. Seal the edges of each apple filled mound by using your fingers and pressing down around or use a fork and press down around the edges
  10. Brush the egg wash on top of each of the mounds and cut slits on the top of each crust for steam to escape
  11. Place inside the oven and enjoy a healthier version of mini apple pies
