Ingredients
  • 2 organic chicken breast sliced thin and cut into chunks
  • 2 tbsp olive oil extra virgin
  • 1 cup bread crumbs flour or make your own from whole wheat crackers in blender
  • 1 medium egg, beaten
  • 1 tsp sea salt
Servings: kids
Instructions
  1. In a blender, combine pepper, salt and whole wheat crackers flour (as an alternative to breadcrumb flour)
  2. Place beaten egg in a shallow plate and coat chicken chunks, remove excess
  3. Pour whole wheat crackers flour in a ziplock bag
  4. Add coated chicken chunks, seal and toss
  5. Pre-heat shallow skillet and add oil (do not let oil smoke)
  6. Add chicken chunks, leave for 3 minutes then flip over and leave for another 3 minutes or until done
  7. Remove from heat and serve with lettuce and grape tomatoes
