Ingredients
  • 3 medium organic eggs beaten
  • 2 tbsp oliive oil extra virgin
  • 4 strips uncured turkey bacon
  • 2-4 strips of mild goat cheese or 1/4 cup of mozzarella shredded cheese
Servings: 2 kids, 2 adults
Instructions
  1. In a small bowl, beat eggs briskly with a fork
  2. Pre-heat two separate small pans or skillets to medium heat, add oil
  3. Pour 1/2 beaten egg on one of the pan, and the all of the bacon pieces on the other
  4. Stir bacon for 2-3 minutes, remove from heat and set aside
  5. As eggs begin to set flat on the pan, gently flip over with a spatula
  6. Reduce heat, add 1/2 cooked bacon and 1/2 the cheese, fold over and let it set for 2 minutes or until cheese melted
  7. Remove and repeat by pouring in the rest of the beaten egg to make another omelette
  8. Cut each omelette in half and serve with antioxidant fruit such as berries!
