Ingredients
  • 1-2 lbs salmon preferably wild caught or without antibiotics/hormones
  • 1/4 tsp avocado oil
  • 4 cloves garlic, minced
  • 1 limon juice
  • 2 tbsp butter suggestion: Earth Balance organic butter
  • 1/2 tsp sea salt or to taste
  • 1/4 tsp pepper
  • 1/4 tsp seafood seasoning suggestion: 21 seasoning or a 'clean' seafood seasoning
  • 1 tbsp parsley, chopped
  • 2-3 sliced yellow and red bell pepper
  • 1 tbsp melted coconut oil
  • 1-2 cups whole grain cooked rice
Servings: 2 kids, 2 adults
Instructions
  1. Preheat oven to 375 degrees
  2. Place a pan on stove over medium heat, add oil until it sizzles, about 15 seconds
  3. Add butter, swirl until it melts, then add minced garlic until fragrant, continue to swirl
  4. Add lemon juice and parsley, swirl about 30 secs to combine, remove from stove
  5. Place salmon filet in a piece of foil large enough to fold over and cover the entire filet. Pour over the garlic butter sauce all over the salmon slowly. Season with salt and pepper, seasoning
  6. Cover the salmon with foil, ensure all sides are covered and closed to contain the sauce
  7. For the side dish, combine coconut oil and sliced bell peppers using your hands, sprinkle sea salt to taste. Ensure all slices of bell pepper are fully covered with coconut oil.
  8. Place sliced bell pepper along the sides of wrapped salmon
  9. Bake salmon and bell pepper for about 13 minutes or until firm. Optional: Open foil after 13 minutes and allow the salmon to broil under the broiler for about 2-3 minutes
  10. Serve immediately with brown rice and bell peppers

Even hubby got into the picture with a very straight up "thumbs up".  My boys say that dad always says he likes my food, otherwise I might give him the 'look', LOL.. they sure know me 🙂
