Ingredients
  • 2 organic chicken breast
  • 1 can pickle juice
  • 1-2 tbsp olive oil extra virgin
  • black pepper to taste
Servings: 2 kids, 2 adults
Instructions
  1. Place chicken breast in ziplock plastic bag, add pickle juice, seal and leave in refrigerator for about two hours (even better overnight)
  2. Remove chicken breast from ziplock (place pickle juice to the side)
  3. Slice chicken breast and cut across into smaller pieces, sprinkle with black pepper
  4. Pre-heat skillet and add olive oil (do not let it smoke)
  5. Add chicken pieces, stir for 5 minutes
  6. Add about half the leftover juice and stir for 3 minutes or until chicken done
  7. Remove from heat and serve!
Recipe Notes

Server with cooked mushrooms and lettuce for added nutrients
