  • 1can garbanzo beans (chickpeas)rinsed well and drained
  • 1cup cherry tomatoes, dicedor 5 tomatoes diced
  • 1/4cup purple onion, diced
  • 1cup cilantro, chopped
  • 1 avocado, dicedoptional, but gives a great flavor and added nutrients
Dressing ingredients:
  • 3tbsp fresh lime juice
  • 2tbsp extra virgin oil
  • 1/2tsp ground cumin
  • 1/2tsp onion powder
  • salt and ground pepper to taste
  1. Drain garbanzo beans into colander and rinse until no foam remains
  2. In a small container, mix together the 2 tbsp lime juice, olive oil, ground cumin, onion powder
  3. Add dressing mix to the rinsed and drained garbanzo beans, cover and let it marinate for at least one hour in the fridge
  4. When ready to make the salad, add 1 tbsp of lime juice to the diced avocado
  5. Toss together the diced cherry tomatoes, diced onion and chopped cilantro with the marinated garbanzo beans
  6. Gently mix in the diced avocado. Season with salt and pepper to taste
