Ingredients
  • 1 lb uncooked shrimp shelled and deveined
  • 1 tsp tapioca flour
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 3 tbsp avocado oil
  • 1/4 cup green onion finely chopped
  • 4 cups cooked riced cold, rinse before using on this reciped
  • 1 cup broccoli chopped
  • 2-3 tbsp coconut amino acids or soy sauce
  • 1 1/2 tsp 100% sesame oil

Instructions
  1. Combine tapioca flour, sea salt, black pepper in a large bowl
  2. Add shrimp and combine. Let it marinate for 10-15 minutes
  3. Heat a large skillet on high heat. Wait 15 secs. Add 2 tbsp of cooking oil
  4. Add shrimp and spread them out on a single layer
  5. Cook about 1 minute each side or until cooked through. Remove to a bowl
  6. Add 1 tbsp oil to the skillet. Add green onions and cook until fragrant
  7. Add chopped broccoli to skillet and stir
  8. Add rice and mix well. Spread rice evenly over the skillet and cook for about 2 minutes, stir and sauté for another 2 minutes
  9. Drizzle 2 tbsp coconut amino acids over rice and stir
  10. Add sesame oil and broccoli and mix well
  11. Add cooked shrimp and mix. Add another tbsp of coconut amino acid if desired
  12. Remove from skillet and serve immediately
