Ingredients
  • 3-4 organic boneless chicken breasts cut into thin slices against the grain
  • 2 large eggs, beaten preferably organic
  • sea salt to taste
  • 1 cup breadcrumbs flour you can make your own using whole wheat crackers and putting them in blender
  • 1/2 cup olive oil
  • fresh ground pepper
Servings: 2 kids, 2 adults
Instructions
  1. Place the beaten eggs and the flour each separately in 2 shallow dishes
  2. Pat the chicken dry and season both sides with salt and pepper
  3. Dip each chicken breast slice in the egg to coat, shake off excess
  4. Lay the chicken breast slice on the flour, turn it over and press into the flour to coat
  5. Put chicken breast slice on a piece of wax paper or plate, repeat until all slices are coated with egg and flour
  6. Pre-heat large pan to medium-hight heat
  7. Once hot, add oil
  8. Lay several chicken slices in the pan and leave for about 3 minutes or until golden brown
  9. Turn the chicken slices over and repeat
  10. Transfer chicken slices to a paper towel lined plate to remove excess oil
  11. Serve and enjoy! A kids favorite!
